Sea Bass with Olives and Capers

A simple tasty healthy fish dish

The ingredients are for two people, for four double up on ingredients

Ingredients

450 grams sea bass
1 small chopped red onion
1 tablespoon capers
2 tablespoon sliced green olives stuffed with pimiento
1 small clove garlic, minced
1 cup chopped tomatoes
1 tablespoon olive oil
Freshly ground black pepper
Pinch of salt optional

Method

Heat oil in a frying  pan, cook onion until soft and add garlic until fragrant.  Add tomatoes, salt, pepper and cook for another 5 minutes.  Lightly oil a baking dish and arrange sea bass.  Pour tomato sauce over fish.  Sprinkle with olives and capers.  Bake @ 350 degrees for 10-15 minutes or until fish is flaky.   
 
Serve with plain boiled rice or chips.
