Delicious easy mid week meal.
450g lambs liver sliced
1 medium onion, chopped
100g mushrooms, chopped
1 red pepper, cored, seeded and chopped
80g fresh breadcrumbs
2 teaspoons mixed herbs
1 large egg beaten
Salt and pepper
Parsley sprigs to garnish
Heat the oil in the pan and stir fry the liver for 6 - 8 minutes until firm and brown
Remove from pan with a slotted spoon and keep hot in a shallow flameproof dish.
Add the onion, mushrooms and red pepper to the pan and saute for 3 minutes. Stir in the breadcrumbs
herbs, beaten egg and salt and pepper to taste. Continue to cook stirring for two minutes. Spoon mixture over
the liver an dcook under a preheated moderate grill for threee to five minutes until crisp and golden brown.
Serve with creamy mashed potatoe and gravy if required
